Hell's Backbone Grill & Farm
A farm restaurant on Scenic Byway 12 in Boulder, a James Beard semifinalist in 2022 and 2023.
Chef-owners Blake Spalding and Jen Castle opened Hell's Backbone Grill in Boulder in 2000, with its own farm supplying the kitchen. It was a James Beard Outstanding Restaurant semifinalist in 2022 and 2023, and 2026 is its 27th season.
The cooking draws on Southwestern and Four Corners traditions. Its October 2026 menu listed black-powder biscuits with sage butter, Three Sisters posole, local lamb meatballs, trout and bison. It is open seasonally; the restaurant lists Nov. 29 as the last day of its 2026 season.
